300ml Pesto

You Will Need:

  • 100g of your lovely homegrown basil
  • 180ml of olive oil.
  • 65g of pine nuts.
  • 65g of parmesan cheese grated.
  • 2-3 gloves of garlic chopped or pressed.
  • A dash of lemon juice.
  • Salt and pepper to taste.

How To Make:

Roast the pine nuts by placing them in a dry frying pan under a medium heat, shake the pan so the nuts get evenly roasted until they are a light golden colour. Add all the ingredients to a food processor and blend until the desired consistency, some like their pesto chucky some like it smooth. Add to a airtight container or jar, refrigerate for an hour or so then enjoy!
