Chicken Pesto Pasta

You Will Need:

  • 200g of your choice of dry pasta.
  • 3 heaped teaspoons of your delicious homemade pesto.
  • 1 tablespoon of olive oil.
  • 250g of lean chicken breast cut into chunks.
  • 300ml of milk.
  • ½ a white onion finely chopped.  
  • 2-3 gloves of garlic chopped finely or pressed.
  • 40g of cream cheese.
  • 80g of grated mozzarella cheese
  • Salt and pepper to taste.

How To Make:

Heat the oil in a saucepan and add the onion and garlic, cook on a medium heat until softened then add the chicken and brown the meat until cooked through. Stir in the milk, then stir in the remaining ingredients, adding the mozzarella in handfuls whilst stirring.

Boil a saucepan of water and start cooking your pasta. Keep the chicken pesto sauce on a low heat stirring until the cheese has completely melted and is not stringy. Serve over the pasta and enjoy!
