Caprese Stuffed Chicken

You Will Need:

  • 2 boneless, skinless chicken breasts
  • 4 slices of mozzarella cheese
  • 4 slices of tomato
  • A handful of your lovely homegrown basil
  • Salt and pepper to taste
  • A dash of olive oil

How To Make:

Preheat your oven to 375°F (190°C).

Lay the chicken breasts flat on a cutting board and make a slit in the side of each breast to create a pocket.

Season the inside of each pocket with salt and pepper.

Stuff each pocket with 2 slices of mozzarella cheese, 2 slices of tomato, and a few basil leaves.

Secure the openings with toothpicks or kitchen twine.

Heat some olive oil in an oven-safe skillet over a medium-high heat.

Sear the chicken breasts on each side until golden brown.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted.

Remove from the oven and let the chicken rest for a few minutes before serving. Garnish with fresh basil leaves, serve with salad and enjoy!
